Real knives, real heat, real consequences — with adult-paced introduction. Erhardt EDPA + Case-Smith research: kids who handle real tools at developmentally appropriate ages have BETTER fine motor outcomes, FEWER injuries (because they take it seriously), and stronger executive function than kids handed plastic toy versions.
🪜 The 5-Level Permission Ladder
L1 · WATCH (12–18 mo): child watches from a learning tower. Parent narrates every action.
L2 · ASSIST (18 mo–3 yr): child pours, stirs, spreads with a butter knife / wavy chopper. Adult hand-over-hand as needed.
L3 · SUPERVISED SKILL (3–5 yr): Y-peeler, real paring knife with finger guard, stovetop with adult standing at the burner. Adult eyes on at all times.
L4 · INDEPENDENT TASK (5–10 yr): microwave solo, toaster solo, stovetop with adult IN ROOM. Knife: claw + pinch grip mastered.
L5 · FULL INDEPENDENCE (10–12+ yr): stovetop solo with adult home, oven with check-in, knife progression complete. Phone within reach.
🔪 Knife Progression by Age
18 mo–3 yr
Butter knife · wavy chopper · toddler-safe utensils (doddl). Banana, cooked egg, soft cheese.
3–5 yr
Y-peeler (peel AWAY from body) · adult-supervised butter knife on tougher foods. Cucumber slicing drills.
5–7 yr
Real paring knife with finger guard + ring (Opinel Le Petit Chef). Claw grip mandatory. Cut-resistant glove on off-hand.
7–10 yr
Standard paring knife. Pinch grip on chef's knife introduced. Onion, carrot, herbs. Hand-eye coordination locked in.
10–13 yr
Full chef's knife (6–8"). Independent prep work. Sharpening basics taught (steel / honing).
13+ yr
Full kitchen independence including stovetop, oven, sharp knives. Cooks family meals 1–2×/wk.

✋ The Two Grips (Teach + Drill)
🦞 Claw grip (off-hand)Curl fingertips UNDER, knuckles forward. The knife rests against the knuckles. Fingertips never near the blade. Drill on cucumber slices first.
✊ Pinch grip (knife-hand)Thumb + forefinger pinch the BLADE just above the bolster. The other 3 fingers wrap the handle. Gives control + leverage. NOT a fist.

Build the habit, then phase it out

Kuhn Rikon Cut-Resistant Kids Gloves (~$15, look for an ANSI A4+ rating) on the off-hand for the first 20–40 hours of real knife work. Build the habit, then phase them out — gloves long-term actually reduce attentional safety, because kids stop tracking blade position when they feel protected.
📋 Teaching Sequence (Each New Skill)
1. Adult demonstrates 3× while the child watches.

2. Adult does it with the child's hands ON the adult's hands (hand-over-hand).

3. Child does it with the adult's hand on the child's wrist (light guidance).

4. Child does it solo, adult eyes on, hands close.

5. Child does it independently, adult in the room.

6. Full independence (advance to the next ladder level).

🔥 Stove + Grease Fire Protocol
WATER ON A GREASE FIRE = FIREBALL. Never. Ever. Water (100°C) hits oil (200–300°C) → instant vaporization → burning oil aerosolized.

Cooking causes ~49% of U.S. home structure fires (NFPA 2023, Ahrens) — unattended equipment is the #1 factor; frying causes the most cooking-fire deaths.

1. Tofadi Fire Blanket (~$25, EN 1869 cert) — drape from your side. OR a metal lid (slide on, don't drop). 2. Turn off the heat. 3. Leave the pan — moving it redistributes burning oil. 4. If it spreads: PASS the extinguisher (Pull · Aim at base · Squeeze · Sweep) → get out + call 911. Never re-enter.

Under 4–5
3-ft kid-free zone. Pan handles turned IN. Adult body between child and stove.
5–7 yr
Watching from a learning tower at a safe distance. Narrate + ask "what would happen if…?"
7–8 yr
Supervised stovetop. Adult AT the burner. Cut-resistant gloves while developing skills.
8–11 yr
Stovetop with adult IN ROOM. Microwave solo. Toaster solo.
~12 yr
Full independent stovetop. Adult home but not required in the kitchen.
13+ yr
Full kitchen freedom + oven. Cooks family meals 1–2×/wk.

🌡️ Microwave Rules
NEVER microwave: bottles (hot spots → mouth burns) · sealed containers (steam explosion) · grapes (plasma burst) · aluminum foil · eggs in the shell · plastic without a microwave-safe label.

Reheat leftovers to 165°F (food thermometer for ages 8+, ~$10). Stir halfway. Open AWAY from the face. Scalds are the leading burn cause in kids 0–5 (American Burn Association). Most-injured age: 7 — instant-noodle "cup of soup" containers are uniquely dangerous: tall, narrow, near-boiling, and top-heavy (Lowell, Pediatrics 2008).
🧊 Food Storage Rules
Cooked rice + pasta: 1–2 days for kids (B. cereus risk). Refrigerate within 1 hour.

2-hour counter rule: any cooked food out >2 hr (or >1 hr above 90°F) gets thrown out. The smell test is unreliable — go by time.

Breast milk: 4 hr room / 4 days fridge / 6 mo freezer.
Prepared formula: 1 hr from start of feed / 24 hr in the fridge.
Honey: NEVER under 12 months (botulism).
